Ingredients
RED VELVET LAVA CAKES
- 1 Quest Chocolate Double Chocolate Chip Cookie
- 4 eggs, room temperature
- 1 tbsp zero calorie sweetener
- 1 tsp vanilla extract
- Pinch sea salt
- 4 oz sugar free chocolate chips
- 5 tbsp melted butter, slightly cooled
- 2-3 drops red food gel coloring
Method
- Preheat the oven to 350 F. Prepare 4 ramekins with non-stick spray and place them onto a baking sheet.
- Cut the cookie into small pieces and place them onto a baking sheet with parchment paper.
- Bake for 5 minutes and then place in the refrigerator to cool completely.
- Meanwhile, whisk the eggs with the vanilla extract until light and fluffy, about 2-3 minutes.
- Transfer the cookie pieces, sweetener and salt to a nutribullet and blend until fine crumbles form.
- In a microwave safe bowl, melt the chocolate and butter together until smooth, let cool slightly.
- Add the cookie ingredients and the melted chocolate to the egg bowl and stir until combined.
- Stir in the food gel. Distribute the batter between the four ramekins and bake for 15-19 minutes.
- The lava cakes are done when they pull away from the side but still wet and giggly on top.
- Flip the cakes onto serving plates and dust with cocoa powder. Serve with ice cream if desired.
