Harvest Chopped Salad – JSHealth

My latest salad creation stars a vibrant mix of sweet caramelised pumpkin, crisp green apple and crunchy walnuts, all harmonised with the sweet tang of cranberries. I finish it off with a drizzle of my homemade maple-Dijon dressing that absolutely elevates this dish!

I love to massage my kale with some dressing for an extra tender bite. If you’re vegan, feel free to skip the feta or use a plant-based alternative!

Ingredients:

  • 400g (14.1oz) butternut pumpkin, cubed 
  • 1 tbsp extra virgin olive oil 
  • 4 kale leaves, stems removed & leaves roughly torn  
  • ½ green apple, sliced into half moons 
  • ⅓ cup walnuts
  • ¼ cup cranberries 
  • 3 radishes, finely chopped 
  • 100g (3.5oz) feta cheese, omit for a dairy-free option 

For the dressing: 

  • 2 tbsp extra virgin olive oil 
  • 1 tbsp white wine vinegar
  • 3 tsp maple syrup
  • 2 tsp Dijon mustard 

Method: 

Preheat oven to 200°C or 390°F. Line a baking tray with baking paper. Add the pumpkin to the tray and drizzle the oil over the top. Season with sea salt and black pepper. Bake for 20-25 minutes or until golden and caramelised. 

To make the dressing, whisk together all of the ingredients in a small bowl or jar. 

Place the kale leaves in a large mixing bowl. Pour over half of the dressing and use your hands to massage the dressing into the kale. This helps to soften the kale leaves. 

Add the baked pumpkin and the rest of the remaining ingredients to the bowl. Pour the reserved dressing over the top and toss to combine. 

Keep stored in an airtight container in the fridge for up to 2 days.

Serves: 2 as a main, 4 as a side
