I am loving all of the healthier treats this summer and these Chocolate Banana Peanut Butter Cups are so delicious and even fairly nutritious. I like them frozen but you can certainly enjoy them from the fridge as well. They’re one of my very favorite treats to grab. They are super easy to make and take about 5 minutes of prep time and only have 4 ingredients. What’s not to love?

I fell in love with TruFru snacks recently- the dark chocolate peanut butter bananas were a favorite so I decided to make my own. These make the best evening snack after dinner! I often find myself grabbing for a sweet treat so these are perfect. My mom stopped by my house right after I made these and I gave her one and she gave it two thumbs up (and she wanted me to write that in my post!).

  • Dark chocolate
  • Coconut oil (to make the chocolate drizzly)
  • Peanut butter
  • Bananas
  • Sea salt

How to Make Chocolate Banana Peanut Butter Cups

These Chocolate Banana Peanut Butter Cups are crazy easy to make! Start by melting your chocolate. You can use milk chocolate instead of dark chocolate if you prefer. Chop up the chocolate and place in a microwave safe container and add in your coconut oil. Microwave for 30 seconds at a time stirring each time until your chocolate is fully melted. 

In a silicone container or in muffin tins lined with muffin liners, pour a small amount of melted chocolate on the bottom of the container and a little up the sides. Top with banana and peanut butter. Pour the chocolate on the top until the peanut butter and banana are covered. Freeze until the chocolate is solid or until the bananas are frozen- whichever you prefer.

I love grabbing a couple of these for a snack before bed for the best snack. To help settle myself for bed, I like the Naked Nutrition Sleep Aid. I like that it has just 1 mg of melatonin because that amount seems to work well for me.

Prep time: 5 minutes  Freeze time: 30 minutes  Total time: 35 minutes

INSTRUCTIONS

  1.  In a microwave safe bowl, add the chocolate and coconut oil. Melt for 30 seconds at a time stirring well each minute until all of the chocolate is melted.
  2. In a muffin tin lined with paper muffin liners (spray with nonstick spray) or silicone muffin liners or in a silicone tray, pour a small amount of chocolate- maybe 2 teaspoons on the bottom of the muffin tin and around the sides.
  3. Top with chopped banana and a teaspoon of peanut butter. If your peanut butter isn’t drizzly, melt it in the microwave for 30 seconds.
  4. Cover the peanut butter and banana with chocolate. Top with a sprinkle of sea salt.
  5. Freeze until the chocolate is solid or until the bananas are frozen- whichever you prefer. If you want them unfrozen, place in the fridge until the chocolate hardens.
