Bringing Cottage Cheese to Life

A few weeks ago I emailed my latest blog post along with an example of what’s been cooking in my kitchen, as I usually do. This feature looked at cottage cheese, which I’ve been eating in an effort to get more protein – doctor’s orders since starting treatment for cancer.

I asked readers to share their favourite ways to enjoy cottage cheese, and six emailed me back these great ideas. If you’re tired of eating cottage cheese the same old way, or you just avoid it altogether, hopefully you’ll try one and be pleasantly surprised!

1. Cottage Cheese Banana Split

“One of my fave ways to eat a banana is to cut it in half and then cut each piece in half lengthwise. Arrange them in a circle on a small plate. Place a scoop of cottage cheese in the middle. Top with a spoonful of low-sugar strawberry jam and a sprinkle of sunflower seeds. Kinda like a banana split. Got this idea from Weight Watchers.” Debrah

2. On Whole Grain Toast with Extra Pepper

“I love cottage cheese. I eat it on whole grain toast with extra pepper…yum!! I ate a ton of it when I was pregnant with my first child. It sustained me til the next snack attack. Haha. … Cottage cheese on toast for breakfast is the best …lol!.” Mona

3. Green Salad Boost

4. Traditionalists – With Fruit

“Lorna and I like cottage cheese with orange segments or chunks of pineapple or fruit cocktail. Especially for breakfast. – As kids we put Roger’s Golden Syrup on it also when it was available but it was mainly fruit.” Bill

5. With Lasagna or Musilix and Fruit

“I don’t like cottage cheese except for in lasagna.  My sister mixes in Musilix and fruit.  She seems to like it.” Kelly

Since people typically use ricotta instead of cottage cheese for lasagna, I did a Google search to see if I could find out why. It seems some feel the cottage cheese is lighter and milder. 6. Made into Pancakes!

(This turned out to be my favourite of the lot. Try this recipe for three ingredients or this one if you don’t mind trading a few more basic ingredients for an even fluffier, lighter texture.) – Cheryl

Cottage cheese may not be one of your favourites, but with one of these fresh ideas, perhaps it could be! It’s high in protein, although also high in sodium, so try to balance that.
