3 Soups I’m Loving for Change of Season

As the temperatures drop and the days get shorter, I find myself whipping up hearty and comforting soups on repeat. Whether you’re in the mood for a creamy blend or something more brothy, soups are an easy way to get an abundance of nourishing veggies into your day.

I just love how creative you can be – it’s so easy to make soups more substantial and satisfying by simply adding in some delicious ingredients. Here’s how:

  • Add a serving of protein:1-2 boiled eggs, a handful of shredded chicken, or a cup of lentils or beans can help keep you fuelled for longer. 
  • Add some toast: A slice of seeded toast, sourdough or my Signature Gluten-Free Loaf is perfect for dipping and soaking up all the warm deliciousness.
  • Add in healthy fats: Try sprinkling on goat’s cheese, feta, or parmesan for extra flavour and depth. I love to throw in crushed nuts or dukkah spice mix, or topping my toast with some avocado.  

With that in mind, here are 3 soup staples I have on high rotation this autumn: 

Tomato, Capsicum & Basil Soup

One of my favourites! The subtle sweetness of the roasted capsicums and tomatoes, combined with the freshness of the basil makes this soup irresistible and full of flavour. It’s a community favourite and the full recipe can be found here or in the JSHealth App

Minestrone Soup (pictured above)

Cosy comfort food at its best – this super filling and fibre-rich soup is a classic winter warmer. I’ve added zucchini and carrots to make it even more colourfully nutrient dense, and pulse pasta (made from legumes) to amp up the total protein content. Make a big batch and enjoy over a couple of days or freeze in portions for later! Full recipe here

Chicken Noodle Soup: Nothing beats a homemade chicken noodle soup. I like to make mine with plenty of veggies – celery, leeks and broccoli work wonderfully. Pop in some shredded chicken and vermicelli (or thin noodles of your choice) and ladle up a warm bowlful! Find the full recipe here.
