Roasted Tomato and Pepper Soup (vegan)

MAKE THE SOUP

In a substantial heavy bottomed pot (I use a Staub cocotte), add the remaining 2 tablespoons of olive oil and warmth on medium-small.  Add the crushed garlic and prepare dinner, stirring, till it is fragrant, about 1 moment (do not brown the garlic as it will get bitter).  Add the white wine stir, and include the roasted greens (including juices) and stock.  Cook uncovered for about 15-20 minutes, stirring sometimes.  Add the basil and stir.

  2.
