Peanut Butter Waffles are a new family favorite! I’ve been looking for a filling waffle or pancake recipe that my family is crazy for and this is it. These are probably the most filling waffles you will ever eat which I love because my kids smother them with syrup so at least I know that they’re getting some awesome nutrition in the waffles.

Peanut Butter Waffles Ingredients

  • Naked Nutrition Organic Powdered Peanut Butter– I love cooking with peanut butter powder! It is excellent in baked goods and Asian-inspired recipes. This peanut butter powder adds 8 grams of protein per scoop (a 2.4 tablespoons serving). This Organic Naked PB has only one ingredient- organic roasted peanuts, has no salt or sugar added and adds a ton of flavor to your recipe. I love adding it to smoothies as well for a peanut butter banana or peanut butter and jelly smoothie!
  • White-whole wheat flour
  • Baking powder
  • Salt
  • Cinnamon
  • Brown sugar
  • Whole-milk Greek yogurt- nonfat will work as well
  • Apple cider vinegar– since I didn’t use buttermilk in this recipe, adding the vinegar makes the milk similar to buttermilk. Don’t worry, you won’t taste it.
  • Eggs
  • 2% milk (or any milk of choice)
  • Vanilla extract

How to Make Peanut Butter Waffles

Making peanut butter waffles is super easy! Just mix together your dry ingredients in a large bowl, whisk together your wet ingredients and then mix them together. Cook the batter in your waffle iron until crispy. I used white-whole wheat flour for extra fiber which works really well in this recipe. Typical waffle recipes call for butter, oil or coconut oil but I challenged myself to use Greek yogurt and I think that they turned out awesome!

You will not be hungry after eating these peanut butter waffles. I typically do not calculate the nutrition facts on my recipes but after using peanut butter powder, whole-wheat flour, milk, eggs and Greek yogurt, I had to know how much protein was in these waffles. One serving of peanut butter waffles has 214 calories, 15 grams of protein and 3.5 grams of fiber. An amazing breakfast choice in my opinion. I am going to make these often and freeze them for my kids for school days.

Prep Time: 10 minutes Cook time: 10 minutes Total time: 20 mins

INSTRUCTIONS

  1. In a large bowl, mix together the whole-wheat flour, powdered peanut butter, baking powder, salt, cinnamon and brown sugar. 
  2. In another bowl, whisk together the Greek yogurt, apple cider vinegar, eggs, milk and vanilla. Gently combine with the dry ingredients, do not overmix.

  3. Add about 1/3-1/2 cup of the waffle mix to your waffle maker and cook for about 3-4 minutes per waffle until each waffle is cooked. You can keep warm in the oven at 250 degrees if you are making a large batch. Enjoy right away.

*Store in the fridge for up to 4 days. Reheat in the toaster.

**Don’t have a waffle maker? You can make these into pancakes! 

***These waffles freeze very well! Just toast in the oven or toaster to reheat.
