Mango Chicken Kebabs are delicious and loaded with flavor with grilled chicken, mango, bell peppers and onions all cooked in a mango soy marinade.
Kebabs are one of my family’s favorite summer meals and I’m embarrassed to say that it’s mid-July already and this is my first time making kebabs this season. Good thing they’re extra delicious because it made the wait worth it! These Mango Chicken Kebabs are full of flavor and are fun to make with grilled chicken, mango cubes, bell peppers and red onion.
Mango chicken kebabs are delicious on their own or would be great served with rice or with corn on the cob. You can even grill the corn! The mango in the mango marinade adds sweetness without adding actual sugar and gives the chicken a great flavor.
Mango Chicken Kebab Ingredients
- Mango
- Boneless, skinless chicken breast
- Bell peppers
- Red onion
- Mango soy marinade- mango, soy sauce, olive oil, red wine vinegar, garlic powder, onion powder
How to Make Mango Chicken Kebabs
These kebabs are so easy to make with just 8 ingredients, many which you probably have in your pantry already. Just blend together the ingredients for the mango marinade- mango, soy sauce, red wine vinegar, olive oil, garlic powder and onion powder. Cut the peppers, onions, chicken and mango into about 1 inch pieces. The mango should not be super ripe and should still be firm so that it is easy to thread onto your skewers. Marinate the peppers, onions, chicken and mango in the mango marinade overnight or at least for 1-2 hours. Thread the ingredients onto your skewers. If you’re using wood skewers, soak them in water so they do not burn as easily. Grill for about 5 minutes per side or until the chicken is cooked through.

How to Cut a Mango
Part of our summer list this year is teaching the kids how to do a bunch of everyday things and one of those includes teaching them how to cut different kinds of produce. I just taught them how to cut a mango and it is pretty easy if you know where the pit is.
How I personally cut a mango is by first peeling the mango. Then, I slice the mango down the side right next to the seed which is in the center of the mango. Then, cut the large pieces into whatever sized pieces I want. Learn some other ways to cut a mango here.
When I buy a mango, I keep it on the counter until it is ripe. When it is fully ripe, if I am not ready to eat it yet, I put it in the fridge. To see if a mango is ripe, give it a gentle squeeze to feel if it is soft. For this recipe, you want your mango to be slightly soft but not too squishy so it holds its shape on the kebab.

INSTRUCTIONS

Thread the chicken, peppers, mango chunks and onion onto the skewers.

In a blender, blend together the mango, olive oil, soy sauce, garlic powder and onion powder.

Pour the mango soy marinade into the skewers and marinate for at least 1-2 hours.

Grill the kebabs on medium-high heat for about 4-5 minutes per side until the chicken is cooked through and has some grill marks.
**If you’re using wood skewers, soak them in water to help prevent burning.
