Bagel with Eggs – Nourish Nutrition Blog -10 minutes

Make a 10 minute bagel with eggs for one. It’s such a delicious and easy meal. Enjoy it for breakfast, lunch, dinner or a bigger snack. I’ll show you how to make the basic version, but add whatever toppings you have on hand!

A bagel with eggs sandwich is such an easy and tasty quick meal. Enjoy it any time of the day, and add sides to make it more filling. It’s great to eat at home, or wrapped in a towel or bag on the go.

Not only is it easy, but the topping options are endless. Add ingredients to the eggs or top your egg sandwich with toppings. See my flavor suggestions below the instructions below.

I keep this breakfast bagel really simple, partly because my fridge is pretty bare. Partly because I wanted to share the base recipe, then add ideas to make it more exciting.

There’s a bit of an art to making your eggs fit in the bagel well, my favorite method is to stir the eggs for a bit, then press in the sides to make a round egg stack. I hold the bagel slice over it to make the eggs the same size.

Using the bagel slice to measure the eggs is helpful so all the eggs fit on the bagel, and they’re even. It’s a simple thing to make the eating experience more enjoyable.

  • Bagel: savory type bagels work well in this breakfast sandwich. Use your favorite bagel.
  • Eggs: I like making two eggs. But you can adjust the number of eggs to meet your hunger level.
  • Butter: Cooking eggs in butter is a must for me. It adds a nice buttery flavor to your bagel breakfast sandwich. Use whatever you like though.
  • Salt, pepper
  • Cheese: I prefer shredded cheddar and whatever else cheese I have. I add it to the eggs instead of on top because it melts more evenly, and doesn’t slide around on the bagel as much. But use what you like.

1.Mix together eggs, salt, and pepper.

2. Cook eggs, cheese in butter over medium-low heat. Add additional toppings, if desired.

Stir with rubber spatula. Form into a round sphere, about the size of your bagel slice.

3. Assemble your bagel with eggs. Add additional toppings if desired. Enjoy immediately. Add sides if desired (fresh fruit, vegetables or salad, chips are all great).

More Breakfast Bagel Flavor Ideas

  • Bacon, egg, and cheese. You can substitute the bacon for Canadian bacon or ham. Also, a sausage patty would be good on this breakfast bagel. A slice of American cheese or cheddar cheese is classic. Use what you have.
  • Chilies, cilantro, and salsa. Add jalapenos or pickled chilies to the eggs, cheese, Top with some tasty salsa and/or hot sauce too.
  • Feta cheese, olives, jarred roasted bell peppers. Get a salty, sweet bagel sandwich with this combo.
  • Canadian bacon, eggs, and avocado. You can add avocado to any of these combinations, but this simple combination is easy and tasty.
  • Cream cheese, eggs, and pickled onions. You can substitute any cheese for a smear of cream cheese, but the creamy cheese, eggs, and tangy pickled onions is a delicious take on the classic.

Storage/Reheating Tips

Store any leftover bagel with eggs in an airtight container or bags. It can be stored for about a week. You can make these sandwiches ahead of time, just keep eggs and bagels separate. Assemble prior to eating.

Reheat leftovers in the microwave or toaster oven.

Substitutions/Tips

  • Bagel options: plain bagel, wheat bagel, onion bagel, asiago cheese bagel, jalapeno and cheese bagel, everything bagel, etc. You can use a gluten free bagel as well.
  • You can also cook your eggs in other ways. Over easy, poached, and sunny side up eggs are great on breakfast sandwiches.
  • Toast your bagel for extra crunchiness.

  • Optional toppings to add to eggs: minced onion, bell pepper, jalapenos or other peppers, chopped broccoli, etc. 
  • Optional toppings for bagel: cream cheese, cooked bacon or ham, sausage, lettuce, salsa, hot sauce, green onion, jarred roasted bell peppers, pickled onions, olives, etc.

Bagel with Eggs for One

Equipment

  • Serrated knife

  • medium mixing bowl

  • Small Saucepan

Ingredients

  • 2 whole eggs
  • salt, pepper to taste
  • 1-2 teaspoons butter
  • 2 Tablespoons shredded cheese I used cheddar and monterey jack, it’s what I had on hand.
  • 1 bagel sliced in half

Instructions

  • Heat up small saucepan over medium-low heat.

  • Crack two eggs into mixing bowl. Add salt and pepper to taste. Whisk eggs together with fork.

  • Once hot, add 1-2 teaspoons butter to pan. Then pour in eggs.

  • Add 2 Tablespoons of shredded cheese to eggs. Stir together.

  • Gently stir with spatula. Form into round, about the same size as your bagel. Flip eggs and cook until desired doneness.

  • Transfer cooked eggs to bagel slice. Add toppings, if desired.

  • Enjoy immediately with fresh sliced fruit, vegetables, chips or your favorite side for a more satisfying meal.

Notes

  • Add your favorite kind of cheese to the eggs. You can place a slice of cheese on top, which is more traditional to an egg sandwich, but I like adding shredded cheeses to the eggs because they slide around on the bagel less.
