I give you my masterpiece: a cornmeal-crust crispy pizza shell, slathered with tomato marinara, and topped with zucchini, yellow summer squash, orange bell peppers, and red onions—with a generous sprinkling of fresh herbs and pinenuts. It’s as yummy as it is pretty. For your party, you can slice it in thin strips or even squares to provide smaller portions. 

Chipotle Black Bean Quinoa Veggie Burgers 

Hand-made veggie burgers are one of my favorite go-to party meals. These simple, flavorful Chipotle Black Bean Quinoa Veggie Burgers are vegan and can be whipped up in a jiffy. Just mix up the veggie burger batter, shape into burgers, and bake on a baking sheet sprayed with non-stick cooking spray, and serve them when they are browned and cooked through. Serve the burgers with a whole grain bun, avocado and tomato slices, dark green leaves, and condiments, like Vegan Ranch Dressing, or ketchup.

Vegan Cowboy Cookies

Game day wouldn’t be complete without some treats, such as these retro Cowboy Cookies, which are crunchy, vegan and packed with wholesome goodness by way of whole grains, dark chocolate, and nuts.

Tollhouse Pan Cookies 

These easy Tollhouse Pan Cookies are completely plant-based. Just pat the dough into a baking sheet and slice them into irregular squares for a simple, delicious treat. They’re super served warm fresh out of the oven!
